The new Michelin guide for Belgium awards stars to nine new restaurants. Two eateries received two stars for the first time including Hof Van Cleve in Kruishoutem now run by Floris Van der Veken and no longer by Peter Goossens. Restaurant Zilte in Antwerp and Boury in Roeselare (West Flanders) retain their three stars. In addition to his one-star, restaurant Neon in Lier (Antwerp) was awarded a green star for its attention to sustainability in its dishes.
Neon’s Nils Proost: “We are convinced green gastronomy is the gastronomy of the future. We believe meat and fish belong to the human diet. That’s why fruit and veg play a leading role. Fish and meat don’t need to play a leading role. For 15 years now I’ve been looking for fish of which I know what its journey’s been. How is it reared? I believe this is very important”.
